Christmas Pudding GF V

Recipe / Stoney Creek Oil

Christmas pudding is essential to our festive indulgences and it's so easy and satisfying to make your own - simply mix the ingredients and steam. No fuss required! For a gluten-free pud, swap the plain flour and breadcrumbs for almond meal or rice flour.

Serves: 4-8

600g mixed dried fruit

175mL dry sherry (or dry liquor of choice)

1 cup Stoney Creek Organic Flaxseed Meal

1 cup plain flour or gluten-free alternative

1/2 cup breadcrumbs

1 tsp baking powder

1 cup brown sugar, tightly packed

50g chopped almonds or hazelnuts

2 large eggs

1 tbsp golden syrup or honey

100g butter, melted and slightly cooled

2 tsp ground cinnamon Zest & juice 1 orange

Custard, cream and ice cream, to serve

1. Steep dried fruit in alcohol overnight.

2. Grease and line a 1.5L pudding bowl.

3. Combine all ingredients in a large mixing bowl and mix well.
