Peanut Protein Balls

Recipe / CORN THINS ®

Makes: 12–15 balls

150g packet CORN THINS® slices

30g peanuts

150g pitted dates

150g natural peanut butter

3 tbsp honey

2 tbsp boiling water Crushed peanuts, for dusting

1. Place the CORN THINS® slices into a food processor and blend until a crumb consistency. Add the peanuts, peanut butter, dates and honey and pulse until combined.

2. Add the water and pulse until mixture is well combined.

3. Place the mixture into a mixing bowl. With wet hands, make small 30g balls and roll through the crushed peanuts to create a dusting.

4. Place the balls on a tray and put into fridge to set for around 20 mins. Store in an airtight container in the fridge.

CORN THINS® are not rice cakes. They’re made from corn and taste delicious, like popcorn squished into a healthy crispbread. CORN THINS® are gluten-free, non-GMO and a good source of fibre. Enjoy them on their own or with your favourite toppings — or even in some interesting recipes.
