Milk being rich in macronutrients and micronutrients, has been acknowledged as a part of food tradition in India. Milk obtained primarily from cows are used to prepare a variety of dairy products like yoghurt, butter, and ice cream etc. worldwide. Paneer, sometimes known as ‘Indian cheese’, is widely used in several nations including India, Nepal, Bhutan, Bangladesh, Pakistan, Afghanistan, Nepal, Bhutan, Sri Lanka and the Maldives. Paneer is prepared by curdling the boiled milk with a souring agent, such as lemon juice, citric acid, vinegar, buttermilk, and yoghurt. Currently, paneer has received the status of national culinary dish in India. Paneer is used for preparation of various culinary dishes and snacks. It can be prepared at home; and is also easily available in grocery stores and supermarkets. Paneer is a rich source of protein, minerals, and vitamins. It has several health benefits when consumed in moderate quantity. Hygienic production of paneer is imperative from food safety point of view. precautions must be taken while preparing the paneer just to avoid the contamination by microbes.
