Chef Amninder Sandhu, Founding Partner at Bawri and F&amp;B Partner at Tipai by Wildlife Luxuries, has carved a remarkable path for herself in the culinary world, blending the richness of her heritage with innovative gastronomy. Growing up in Jorhat, Assam, in a family that revered food, her early experiences shaped her love for cooking – even if she was initially a fussy eater. A vivid memory from her childhood involves picnics in Arunachal Pradesh, where her uncles taught her the magic of cooking over an open fire, igniting her curiosity about the culinary arts. "I remember one time when I was about three; at one of the picnics, we stuffed the fish we had caught into bamboo and cooked it over an open fire," she shares. "My uncle also showed me how to cook eggs in water, which felt like magic. It was the first time I realised that cooking could be cool."Amninder pursued her culinary education at the Institute of Hotel Management (IHM) Aurangabad, and began her professional journey as a management trainee with the Taj Group of Hotels in 2003. "For two years, I trained in Mumbai, Delhi, and Kolkata, landing my first job at Taj Land's End, Mumbai, in 2005. My last job before venturing out on my own was also at Taj Land's End, at the Masala Bay restaurant," she adds.A significant moment for her was when she helped cater an event at the Prime Minister's house. She also had the opportunity to collaborate with the granddaughter of Maharaja Bhupinder Singh of Patiala, who shared her family's heirloom recipes with Amninder. "This experience inspired me to pursue open-fire, gasless cooking, which led to the creation of Arth," she reveals. "From 2017 to 2020, Arth was the most challenging project I've ever undertaken, requiring custom-designed equipment and a lot of trial and error." When the pandemic hit in 2020, the restaurant had to close. During the lockdown, she launched cloud kitchens and eventually opened Bawri in Goa in June 2023. Next, she set up Tipai Palaash in Nagpur – her first fine-dining experience in a forest setting – in October 2023, followed by Bawri BKC in December 2023.With numerous accolades, including a National Award for the best female chef in India, Amninder's journey is marked by dedication and resilience. Her vision extends beyond her kitchens; she aims to write an Indian version of the Larousse Gastronomique, sharing her culinary expertise with aspiring chefs.
