Cook’s Tip 

You can buy ready made sugar syrup or simply make your own by heating equal parts of sugar and water in a small saucepan over low heat until sugar dissolves. Chill and keep in the fridge.

1 Put the blackberries, banana, ginger, pomegranate juice and a few small ice cubes in a blender. Cover and blend until smooth and thick.

2 Pour the smoothie into a serving glass and garnish with a thyme sprig and frozen blackberry.
