Mini salmon, asparagus and pea frittatas
Salmon is high in omega-3 fatty acids that help reduce inflammation. Ready in less than 30 minutes, this recipe is a winner!
Small bunch dill, chopped
Handful of watercress, to serve
You will need:
A muffin tin, lined or greased
1 Heat the oven to 180C Fan/Gas 6. In a large bowl mix together the eggs, egg whites, smoked salmon, peas, asparagus and dill. Season to taste.
2 Divide the mixture between the muffin tin and bake for 15-20 mins, or until set. Leave to cool for 10 mins in the tin. Remove and serve hot or cold with watercress.
Per serving: 85 cals, 4.5g fat, 1g sat fat, 1g carbs
