Baked camembert & asparagus dippers
Serves: 6
Prep time: 5-10 minutes
Cook time: 15 minutes
INGREDIENTS
- 1 packet raw whole almonds
- 8 sprigs thyme, leaves picked
- 3 sprigs rosemary, leaves picked
- 2 packets asparagus Glug olive oil
- 1/2 lemon, juiced
- Salt and milled pepper
- 1 large wheel camembert
METHOD
1. Preheat oven to 180°C.
2. Toast almonds in pan for 1 minute. Remove and roughly chop together with herbs.
3. Toss asparagus in olive oil and grill or pan-fry until tender. Season well and drizzle with lemon juice.
4. Bake cheese on a greased and lined baking tray for about 15 minutes or until gooey.
5. Serve immediately with almond topping and asparagus.
Soy, apricot and chilli snoek
Serves: 4-6
Prep time: 10 minutes
Cook time: 25-30 minutes
INGREDIENTS
- 1 whole snoek, butterflied
- 2 lemons, sliced
- Salt and milled pepper
- 2 Tbsp butter
- 1/4cup soy sauce
- 1/4cup smooth apricot jam
- 1 lemon, juiced
- 2 tsp chilli flakes
For serving:
Micro herbs or fresh coriander
