  • 3/4 cup raisins (120g), roughly chopped

  • 1/3 cup rum

  • 700g packet square dark fruit cake

  • 1 litre tub good-quality vanilla bean ice-cream

  • 170g block Rolo chocolate, chopped

  • 1/2 cup blanched almonds, toasted, chopped

  • 1/2 x 1 litre tub good-quality chocolate ice-cream

  • Warm caramel, icing sugar
