SWEET LEGACY

AMI PATISSERIE

For Japanese pastry chef Makoto Arami, desserts are no after-thought-and he showcases this in his brand-new Kyo-machiya-inspired concept on Scotts Road. A pastry-led chef's table discovery menu awaits where he fuses classic French techniques honed in the kitchens of renowned restaurants, including Beige Alain Ducasse Tokyo, with his Japanese heritage to create desserts that toe the line between sweet and savoury. Arami's alcohol-infused seasonal fruit tarts are always a hit, especially the best-selling Shizuoka crown melon tart with layers of Cointreau vanilla custard within flaky filo tarte and crown melon balls for texture. Other creations such as the signature choux are exemplary of the chef's shokunin spirit, in the mastery of one's craft.
