Abstract

Vegetables and fruits have an important role in healthy eating habits. In addition, all nutritional recommendations include these functional foods. They have useful components for example water-soluble and fat-soluble vitamins, minerals (such as micro-elements and macro-elements), phytonutrients or fiber. Furthermore, vegetables and fruits consumption have positive effects on human body: prevent diseases (such as obesity, cardiovascular, and digestive diseases), help to ensure carbohydrate and fluid intake on human body and contribute to the healthy life. Therefore, we want to present the most significant properties of these functional foods.
