Louise slice, sometimes called Louise cake, is an old-fashioned Kiwi treat. The traditional version includes a jammy layer; here we roasted fresh rhubarb instead.

Rhubarb Louise slice

SERVES 12 PREP + COOK TIME 1 HOUR 35 MINUTES (+ COOLING & STANDING)

750g rhubarb stalks (about

2 bunches), cut into 20cm lengths

1½ tablespoons caster sugar

125g butter, softened

¾ cup (165g) caster sugar, extra

2 teaspoons vanilla bean paste

2 egg yolks

1¾ cups (260g) plain flour

1½ teaspoons baking powder

TOPPING

4 egg whites

1 cup (220g) caster sugar

1 teaspoon white wine vinegar
