Pineapple Upside Down Cake

Serves: 12

Melted butter and brown sugar create the rich caramel topping for our take on an old-world classic

1½ cups butter, melted

2/3 cup packed light brown sugar

12 pineapple slices from 2 (20 oz.) cans, drained, liquid reserved

3 cups all-purpose flour

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. ground nutmeg

1 1/3 cups granulated sugar

2 eggs

1 cup milk

2 tsp. vanilla extract

1 Heat oven to 325°F. Coat 13"x9" baking pan with cooking spray; add ½ cup butter, tilting pan to coat. Sprinkle brown sugar over butter. Cut 10 pineapple slices in half; cut remaining slices into quarters. Arrange over sugar mixture in scalloped pattern, as shown.
