White chocolate surprise muffins 

If you’re looking for an easy afternoon treat, then look no further. These quick choc muffins come with an irresistible gooey centre. 

MAKES 12 PREP 10 MINS COOK 20 MINS, PLUS COOLING 

You will need: 12-hole muffin tin and muffin cases

1 Heat the oven to 160C Fan/Gas 4. Line a 12-hole muffin tin with cases. In a large bowl, sift all the dry ingredients.

2 In a separate, medium-sized bowl, whisk together the eggs, oil, soured cream and milk until smooth.

3 Pour the wet ingredients into the dry ones, and mix until just combined.

4 Spoon in half the batter into all the cases. Press a frozen truffle into the centre of each, then top with the remaining mixture.

5 Bake for 20 mins, until squidgy. Remove from the oven and allow to cool for 15 mins. Dust with icing sugar and serve.

Per serving: 328 cals, 16g fat, 7.5g sat fat, 39g carbs

FOOD ED'S TIP You could use other flavoured chocolates of your choice, such as caramel or coconut. The muffins can be stored, tightly covered, for up to 3 days.

Chocolate and hazelnut self-saucing pudding
