Turkey skewers with herb couscous
If the weather is warm, cook on the barbecue.
SERVES 4 PREP 10 MINS COOK 10 MINS
- 500g diced turkey breast
- 2tbsp tamarind paste
- Zest and juice of 2 limes
- ½tsp chilli flakes
- 1tsp caster sugar
- 200g couscous
- 350ml vegetable stock
- Bunch of spring onions, finely sliced
- Small bunch of mint, finely chopped
- Small bunch of parsley, finely chopped
- 400g tomatoes, diced
- Tzatziki, to serve
You will need
- Wooden or metal skewers
1 Heat the grill to medium-high. Mix the turkey with the tamarind paste, lime zest and juice, chilli flakes and sugar. Thread onto skewers and put on a foil-lined grill tray.
2 Grill for 8-10 mins, turning halfway to brush with some of the remaining marinade, until cooked through and golden.
