At executive chef Scott Pickett’s MATILDA 159 DOMAIN, Australian design and wood-fired local fare are firmly in the hot seat

HOW DO YOU DEFINE CONTEMPORARY AUSTRALIAN CUISINE?

It’s a question Scott Pickett, the renowned Melbourne chef and restaurateur, poses with his latest venture, Matilda 159 Domain. Taking up residence at South Yarra’s upscale United Places hotel, Matilda (as it’s known for short) captures our elusive national flavour in more ways than one. “We tried to implement a sense of place without being cheesy or gimmicky,” explains Pickett. “The fit-outs, the design, the colour palettes, which nod to the great red centre— all bring touches of Australiana.” Design group Projects of Imagination incorporated rich timbers, cosy leather and swathes of sumptuous linen into the interior—elements that feel both raw and polished. But then, Pickett has always liked his fine dining on the casual side.
