This Goan-style red lentil curry is subtly spiced, nourishing, and ideal for the monsoon months when the rain creates a cool, inviting atmosphere perfect for enjoying a hot, soothing meal.

INGREDIENTS

1 cup masoor dal (red lentils), washed and drained

2 tablespoons coconut oil

1 medium onion, finely chopped

2 green chilies, slit

1 teaspoon mustard seeds 6-8 curry leaves

2 cloves garlic, minced

1-inch piece ginger, grated
