ROOIBOS AND HONEY BUNNY MARSHMALLOWS
Makes 24 marshmallows A LITTLE EFFORT 30 mins + 2 hrs, to set
WHAT YOU NEED
7 x 2g gelatine leaves 125ml (½ cup) Rooibos tea, freshly brewed 125ml (½ cup) water 120g honey pinch salt 200g desiccated coconut, toasted
HOW TO DO IT
1 Line a 29 x 23cm baking tray with non-stick baking paper, leaving some overhang on the sides.
2 Soak the gelatine sheets in cold water until softened. Squeeze out any excess water and place in the bowl of a stand mixer fitted with the whisk attachment. Add the still-warm Rooibos tea and stir to dissolve.
3 In a saucepan over medium-high heat, pour the 125ml (½ cup) water, honey and pinch of salt. Bring to the boil and cook, without stirring, until the temperature reaches 118°C (soft ball stage) on a sugar thermometer, about 5 – 7 minutes.
